An evergreen tree reaching up to 8 m in height and with whitish smooth branches, in maturity, while the younger ones are covered in hair.

The leaves, simple, facing each other, are of an intense green colour on the upper side and lighter on the underside, lanceolate or elliptic shaped and hairless on both sides. The adult leaves have a serrated edge, their ovate shape characterised with nerves that are clearly visible and somewhat protruding.

The flowers are small, unexceptional and similar to the olive tree, white yellowish-green in colour and blossoming in tight clusters from the axils of the leaves; they have a bell-shaped cup, with 4 triangular lobes. The corolla has 4 star-shaped open petals.

The fruit of the green olive tree is a globose-drupe resembling a spheroidal olive, the size of a pea and black in colour with one or two seeds.

The green olive tree flowers in spring and bares fruit in autumn.

Living throughout southern Europe, south-west Asia and north-west Africa, they need a gentle climate where the winters are not harsh while remaining indifferent to the type of substrate soil and growing in holm oak or Cork oak groves.

The tree is favoured by livestock as well as deer.

The wood is hard, white to yellowish in colour, although rarely used given that tall specimens are rare.
